Chicken Masala (Tikka?)

1 cup rice cooked in 2 Cups Water

1 1/2 pounds chicken meat cut chunks cooked in 1 1/2 tablespoons Olive oil for 4-5 minutes

Salt and freshly ground black pepper, added to chicken

+1/2 medium sweet onion, diced

+ 3 tablespoons tomato paste

+1 1/2 teaspoons chili powder

+1 can tomato sauce(15-ounce)

+1 tablespoon freshly grated ginger

+3 cloves garlic or more, minced

+2 teaspoons garam masala

+1 1/2 teaspoons ground turmeric

1 cup chicken stock

added last to not overcook

1/2 cup Almond milk

2 tablespoons chopped fresh Parsley leaves
